Smoking Chambers
The design of smoking chambers is modular; by assembling different modules, machines with varying output capacities can be constructed, depending on user needs.
Basic smoking chamber equipment:
- Microprocessor control system
- Psychometric humidity metering
- Heating system with a temperature range of 0 - 100°C
- Cleaning system
- Misting system
- Circulation system
- Smoke supply system
- Fresh air supply system
- Ventilation system
- Smoke generator
The microprocessor control system controls the technological process of heat treatment according to a pre-selected program. It controls and operates the smoke generator, the chamber cleaning system and the operation of ventilators. It also senses and controls the humidity and temperature in the chamber, temperature in the product core and temperature in the smoke generator. Its display shows chamber and product core temperature as well as chamber humidity readings, the current time, the program number and the step number. Pre-set values and actual values can be shown not only on the display but also on a computer, printer or recorder. Data archiving is also possible. The microprocessor control system enables storing as may as 99 programs in its memory, and each program may contain up to 20 steps. In case of a power supply failure, after the restoration of supply, the interrupted programs are resumed from their previous point.
Psychometric humidity sensing: humidity in smoking chambers is determined from temperature values measured by a dry and a wet bulb thermometer using the microprocessor control system.
Optional smoking chamber heating systems:
- Electrical heating system
- Steam heating system
- Gas heating system
The cleaning system, controlled by the microprocessor control system, provides cleaning inside the smoking chamber.
The misting system is controlled by the microprocessor control system on the basis of humidity values measured in the smoking chamber. Water misting may produce a maximum humidity of up to 92%. With this system, water is sprayed by nozzles provided inside the smoking chamber with a spray radius reaching the heating surfaces. If the heating is on, this produces almost perfect transformation of water into steam.
The circulation system, relying on circulation ventilators, provides a uniform flow of air, an air/smoke mixture, or steam inside the smoking chamber, facilitating even distribution of temperatures across the entire space. The circulation system also incorporates a fresh-air supply system and a ventilation system. The air supply system consists of a connecting duct between the smoke generator and the smoking chamber and a closing damper. The fresh-air supply system contains a fresh air damper. The ventilation system is composed of a closing damper, an exhaust ventilator and a flue.
The smoke generator is an integral part of smoking chambers. Two smoke generator types are available, depending on required amounts of smoke.
Optional smoking chamber accessories:
- Cooling – cold smoke technology option
- Sprinkler
- Catalyst
- Smoking trolleys
- Smoking sticks
Optional smoking chamber design variants:
- Standard variant
- Through variant
- Two-row variant
The standard variant enables smoke trolleys to be arranged singly along the length of the smoking chamber.
The through variant differs from the standard one in that it has an additional door to enable entry of smoke trolleys. The floor’s highest point is in its centre and the floor is sloped towards the doors.
The two-row variant allows smoke trolleys to be arranged in two parallel rows along the length of the smoking chamber.
Optional smoking chamber door opening variants:
- Left-hand opening
- Right-hand opening
